When you think of Russia, the first thing that comes to your mind is probably the famous vodka. But our vast country is home to numerous types of delicious food.

For example, everyone’s favourite warabi (bracken) is also produced in Russia!

Bracken is mainly produced in the Altai Krai, where only a few production or manufacturing facilities are present. It is a clean environment with pure water and soil, very well fit for cultivation of bracken. A land of infinite green basking in sunlight.

Bracken is a type of fern, which are thought to be one of the oldest plant groups in the world.

Scientists believe that the principal component of coal was generated by alteration (coalization) of fern plants under the influence of geothermal heat and ground pressure. There

are currently only a few known types of edible ferns (about 20000), but bracken is one of them.

Bracken is rich in folic acid and vitamin B2. It also contains vitamin E, potassium, dietary fiber, zinc and iron. Since bracken is low in calories and carbohydrates, it can be considered a

healthy wild vegetable. Improve your health with bracken!

Japanese-style fern pasta (for one person)

Pasta – 80g

Bracken – 30g

Shimeji – 25g

Dried seaweed – 1 pinch

Oil – 1 table spoon

Salt and pepper – to taste

Add oil to a frying pan.

Slowly start adding bracken and shimeji. Boil pasta (don’t forget to add salt).

Wash the wakame seaweed and add it and pasta both to the frying pan. When it’s ready, add some salt and pepper before serving.
