Russian Porridge at FOODEX JAPAN 2017 exhibition

Porridge from ancient times took an important and honorable place in the daily diet, being, in fact, one of the main dishes on the table, for the poor and the rich people in Russia.

Porridge came up in the old days, when nobody knew any of the millstones or mill, and porridge was obviously the very first dish cooked by people from cereal grains.

It is necessary to say that in Ancient Rus’ people called porridge everything that was prepared from the crushed products. Ancient Russian had such porridge as porridge from crushed dry bread. Fish porridge was also popular.

None of the world's cuisine had and has as many porridge recipes as a traditional Russian cuisine has. And diversity is reflected not only in recipes, but also in abundance of cereals, of which these dishes are prepared: buckwheat, barley, millet, rice, etc.

Such large winter holidays as New Year Eve and Christmas holidays could not be celebrated without the ritual porridge.

But when you see the word "porridge" in the context of Russian epic poems, songs, stories, parables, fairy tales, and even in the annals themselves it always means buckwheat porridge, and not any other. It is, in contrast to other porridge, could be eaten not only hot, but also cold with milk or kvass (rye beer). No other porridge got as much respect as buckwheat porridge among the people.

Buckwheat porridge is very good for the health: it harmoniously combines protein, carbohydrates and vitamins. The very important point is that buckwheat porridge goes well with almost all products: meat, fish, mushrooms and vegetables.
